Latin Arroz con Pollo

Ingredients

  • Chicken thighs700 g
  • Rice350 g
  • Bell peppers2 pcs
  • Peas150 g
  • Tomatoes300 g
  • Broth800 ml
  • Salt1 to taste
  • Bay leaves2 pcs
  • Paprika1 tsp
  • Ground cumin1 tsp
  • Garlic2 cloves
  • Oil2 tbsp
  • Tomato paste2 tbsp
  • Canned corn80 g

Instructions

Season the chicken with salt, cumin, paprika, and garlic, then brown it.

Add onion, pepper, and carrot and cook until soft.

Add the rice and stir so it is coated with oil and spices.

Add tomatoes or tomato paste, hot broth, and bay leaf.

Cook covered for 20-25 minutes until the rice and chicken are done.

Add peas or corn, rest for 5 minutes, and serve.
