Cheese Burek
Crispy Balkan filo pastry rolled into spirals, filled with a delicate mixture of feta, eggs, and yogurt.
Ingredients
- phyllo dough400 g
- bryndza or feta400 g
- egg2 pcs
- yogurt150 g
- oil80 ml
- sesame seeds1 tbsp
- butter30 g
Instructions
In a bowl, mash the feta or bryndza with a fork into fine crumbs, add the eggs and yogurt, and mix thoroughly until you get a smooth, thick filling.
Preheat the oven to 190°C. Line a round baking pan with parchment paper and grease lightly with oil.
Unroll the filo sheets and cover them with a damp towel so they don't dry out or crack while you work.
Take one sheet of filo, brush generously with oil, cover with a second sheet, and brush with oil again.
Spread a strip of the cheese filling along the longer edge of the sheets, roll up into a tight rope about 3-4 cm thick, then coil the rope into a spiral.
Arrange the spirals snugly next to each other in the pan (or lay the ropes out in rows), and brush the surface generously with melted butter.
Sprinkle with sesame seeds if desired, and bake for 30-35 minutes until golden brown and crisp.
