Kapusniak (Sauerkraut Soup)
A hearty Ukrainian soup with sauerkraut, millet, potatoes, and meat broth.
Ingredients
- Pork400 g
- Sauerkraut300 g
- Millet80 g
- Potato3 pcs
- Onion1 pcs
- Carrot1 pcs
- Tomato paste1 tbsp
- Sour cream100 g
Instructions
Simmer the pork in 2.5 L of water for 40 minutes, then remove it and cut it into pieces.
Rinse the sauerkraut if it is too sour, then add it to the broth.
Rinse the millet until the water runs clear and add it to the pot.
After 10 minutes, add the diced potatoes.
Make a frying base from onion, carrot, and tomato paste, then add it to the soup.
Cook until the potatoes are tender. Serve with sour cream.
