Kendyukh
A traditional baked stuffed pork stomach with a rich meat filling.
Ingredients
- Cleaned pork stomach1 pcs
- Pork800 g
- Pork lard250 g
- Pork liver300 g
- Onions2 pcs
- Garlic5 cloves
- Marjoram1 tsp
- Black pepper1 tsp
- Salt2 tsp
Instructions
Rinse the pork stomach thoroughly, turn it inside out, salt it, and rinse again.
Dice the pork, lard, and liver finely.
Mix the meat with garlic, onion, salt, pepper, marjoram, and bay leaf.
Fill the stomach loosely and sew it closed with kitchen thread.
Prick it in several places, place in a baking dish, and bake at 170°C for 1.5–2 hours.
Cool under a light weight, slice, and serve as a cold appetizer.
