Kholodets (Meat Aspic)
A classic chilled meat jelly made from slow-cooked pork and aromatic broth.
Ingredients
- Pork feet2 pcs
- Chicken thigh1 pcs
- Onion1 pcs
- Carrot1 pcs
- Garlic5 cloves
- Bay leaf3 pcs
- Peppercorns10 pcs
- Grated horseradish50 g
Instructions
Soak the pork feet for 2 hours, scrape them clean, cover with fresh water, and discard the first boiling water.
Simmer for 4-5 hours over very low heat. Add onion, carrot, bay leaves, and peppercorns.
After about 3 hours, add the chicken thigh for a softer flavor.
Remove the meat from the bones, chop it finely, and strain the broth.
Arrange the meat with garlic and herbs in molds, then pour the broth over it.
Chill for at least 6 hours until fully set. Serve with grated horseradish.
