Kulish
A hearty Cossack millet soup with pork lard, potatoes, and onion.
Ingredients
- Millet180 g
- Pork lard120 g
- Potatoes3 pcs
- Onion1 pcs
- Carrot1 pcs
- Water or broth1200 ml
- Fresh herbs20 g
Instructions
Rinse the millet several times until the water runs clear to remove bitterness.
Dice the pork lard and render it in a cauldron or heavy pot until crisp.
Add chopped onion and carrot and saute for 5 minutes until softened.
Pour in water or broth, add diced potatoes, and cook for 10 minutes.
Add millet, salt, and pepper; simmer for 18–20 minutes until the grain is tender.
Finish with herbs, cover, and let the kulish rest for 10 minutes.
