Lemishky
An old buckwheat flour dish cooked with boiling water and baked until lightly crusted.
Ingredients
- Buckwheat flour250 g
- Water700 ml
- Salt1 tsp
- Oil or lard2 tbsp
- Cracklings for serving80 g
Instructions
Sift the buckwheat flour and mix it with salt.
Bring water to a boil, then add the flour in a thin stream while stirring constantly.
Cook for 5–7 minutes until thick and pulling away from the sides.
Transfer to a greased dish, smooth the top, and drizzle with oil.
Bake at 190°C for 20–25 minutes until lightly crusted.
Serve with cracklings, mushrooms, milk, or sour cream.
