Matoke Stew
A hearty Ugandan stew made with green matoke bananas, tender beef, tomatoes and hot pepper, slow-cooked into a rich sauce.
Ingredients
- green matoke bananas8 pcs
- beef (for braising)600 g
- tomato300 g
- onion1 pcs
- green bell pepper1 pcs
- garlic3 cloves
- fresh chili1 pcs
- ground coriander1 tbsp
- beef broth500 ml
- oil30 ml
- lemon juice15 ml
- salt1 to taste
- black pepper1 to taste
Instructions
Peel 8 green matoke bananas, cut into large chunks and toss with 15 ml lemon juice to keep the flesh from browning.
Heat 30 ml oil in a heavy-bottomed pot over medium-high heat. Add 600 g cubed beef, season with salt, and sear for 6–8 minutes until browned on all sides.
Add 1 chopped onion and 1 green bell pepper, and cook for 3–4 minutes until the onion softens.
Add 3 minced garlic cloves, 1 finely chopped chili and 1 tbsp ground coriander; stir-fry for 1 minute to release the spices' aroma.
Add 300 g chopped tomatoes and 500 ml beef stock, season with black pepper and salt to taste. Bring to a boil, cover with a lid and simmer over low heat for 20 minutes.
Add the matoke chunks to the pot, stir gently, cover and simmer for another 30–40 minutes, until the beef is tender and the green bananas are soft.
Taste the stew, adjust with more salt and black pepper if needed, heat through for 2 minutes and serve the matoke hot with the beef and tomato sauce.
