Polish cwikla with horseradish
A sweet-and-spicy Polish relish made from tender beets, fresh horseradish and apple, that pairs wonderfully with meat dishes.
Ingredients
- beet800 g
- water1500 ml
- grated horseradish30 g
- apple1 pcs
- lemon juice2 tbsp
- sugar1 tsp
- salt1 to taste
- black pepper (ground)1 to taste
Instructions
Wash the beets, place them in a pot, cover with 1500 ml of water and cook covered for 45–60 minutes, until a knife slides in easily.
Drain the beets, let them cool for 20 minutes, then peel.
Grate the cooled beets on a fine grater. Peel the apple and grate it on the same grater.
Add the grated horseradish, lemon juice, sugar, salt and black pepper to the beets.
Mix thoroughly, transfer to a bowl and chill for 20 minutes to let the flavors meld.
Serve the cwikla cold as a side to sausage, pâté, cold cuts or baked fish.
