Pork Menudo
A hearty Filipino stew with chunks of pork and liver, potatoes, carrots and a sweet tomato sauce, traditionally served with steamed rice.
Ingredients

- pork liver200 g
- soy sauce60 ml
- lemon juice30 ml
- vegetable oil45 ml
- potato300 g
- carrot180 g
- onion1 pcs
- garlic4 cloves
- bell pepper1 pcs
- sausages150 g
- tomato paste30 g
- tomato sauce400 ml
- water300 ml
- bay leaf2 leaf
- raisins40 g
- rice300 g
- salt1 to taste
- black pepper1 to taste
Instructions
Cut the pork into cubes about 2 cm. Mix it with soy sauce and lemon juice and let it marinate for 60 minutes in the refrigerator.
Dice the potatoes and carrots, finely chop the onion, mince the garlic, cut the bell pepper into pieces, and cut the liver and sausages into cubes or slices.
Heat half the oil in a heavy pot. Sauté the potatoes and carrots for 5–7 minutes until lightly browned, then transfer to a plate.
Add the rest of the oil and sauté the liver with garlic for about 1 minute, just until it changes color, then remove as well.
In the same pot, sauté the onion for 3–4 minutes. Add the marinated pork along with the marinade and cook for 5–7 minutes, until the meat is lightly browned.
Stir in the tomato paste, pour in the tomato sauce and water, and add the bay leaf. Bring to a boil, cover and simmer over low heat for 30–35 minutes, until the pork is tender.
Return the liver, potatoes and carrots to the pot, add the sausages, bell pepper and raisins. Simmer for another 8–10 minutes, until the vegetables are tender but not falling apart. Season with salt and black pepper to taste.
Separately, cook the rice in water until done. Serve the menudo hot with the rice.
