Ingredients

  • wheat groats250 g
  • water650 ml
  • butter40 g
  • salt1 tsp

Instructions

1

Sort through the wheat grits and rinse them in a sieve under cold running water until the water runs clear.

2

Transfer the grits to a heavy-bottomed pot and pour in 650 ml of cold drinking water.

3

Bring the water to a boil, add salt and stir.

4

Reduce the heat to low, cover the pot with a lid and cook for 20–25 minutes, stirring occasionally so the grits don't stick to the bottom.

5

If the water has evaporated but the grits are still firm, add a little hot water and cook until the porridge is soft.

6

Remove the pot from the heat, add the butter and stir gently.

7

Cover the porridge with a lid and let it sit for 10 minutes so the grains absorb the remaining moisture; serve warm.
