Salted Watermelon

Fermented watermelon in brine, a traditional savory Ukrainian snack.

Ingredients

  • Small watermelon2 kg
  • Water1500 ml
  • Salt45 g
  • Sugar30 g
  • Currant or cherry leaves6 pcs

Instructions

Wash the watermelon well and cut it into large wedges with the rind.

Pack the wedges into a clean jar or enamel container.

Dissolve salt and sugar in cold boiled water.

Pour the brine over the watermelon and add currant or cherry leaves if desired.

Place a light weight on top and leave at room temperature for 2 days.

Move to a cool place for 5–7 days until ready.
