Stewed Beans

Comforting beans simmered with vegetables and a savory tomato base.

Ingredients

  • Red kidney beans300 g
  • Onion1 pcs
  • Carrot1 pcs
  • Tomato paste3 tbsp
  • Garlic3 cloves
  • Smoked paprika1 tsp
  • Oil2 tbsp

Instructions

Soak the beans overnight, then boil them until tender, about 40-50 minutes.

Saute the onion and carrot for 5 minutes.

Add the tomato paste and cook for another 3 minutes.

Add the beans with a small amount of their cooking liquid and stir.

Season with minced garlic, smoked paprika, salt, and pepper.

Simmer for 15 minutes, then garnish with parsley.
