Varenyky with Liver and Lard
Hearty dumplings filled with liver, onion, and cracklings.
Ingredients
- Flour400 g
- Water180 ml
- Egg1 pcs
- Liver400 g
- Pork lard150 g
- Onions2 pcs
- Sour cream100 g
Instructions
Boil or quickly fry the liver until cooked, then cool it.
Dice the lard and render until crisp; reserve some cracklings for serving.
Grind the liver with fried onion and some rendered lard.
Knead dough from flour, water, egg, and salt.
Roll, cut rounds, and fill with the liver mixture.
Boil for 4 minutes after they float; serve with cracklings and sour cream.
