Vereshchaka
An old-style pork stew cooked in bread kvass with onion and spices.
Ingredients
- Pork700 g
- Lard or oil2 tbsp
- Onions2 pcs
- Bread kvass500 ml
- Dried rye bread80 g
- Honey1 tsp
- Bay leaves2 pcs
- Allspice berries4 pcs
Instructions
Cut the pork into large pieces, season with salt and pepper, and brown in lard.
Slice the onions into half-rings, add to the meat, and fry for 5 minutes.
Pour in bread kvass and add bay leaf, allspice, and a little honey.
Cover and simmer gently for 45–60 minutes until tender.
Crumble or grate dried rye bread into the sauce to thicken it.
Simmer for 5 minutes more and serve with buckwheat, potatoes, or rye bread.
