Berry Kholodets

A light berry dessert thickened with starch.

Ingredients

  • Berries400 g
  • Water1000 ml
  • Sugar80 g
  • Starch3 tbsp

Instructions

Rinse the berries, cover with water, and cook for 8–10 minutes.

Strain the liquid and press the berries through a sieve if desired.

Return the liquid to the pot, add sugar, and bring to a boil.

Dissolve starch in cold water.

Pour in the starch slurry in a thin stream while stirring constantly.

Cook for 1 minute, pour into dishes, and chill.
