Azerbaijani Plov with Dried Fruit
Aromatic saffron rice plov with butter, raisins, dried apricots, and chestnuts.
Ingredients
- Basmati rice400 g
- Saffron0.3 g
- Butter120 g
- Raisins80 g
- Dried apricots100 g
- Peeled chestnuts150 g
- Thin lavash2 pcs
- Salt1 tsp
Instructions
Rinse the rice and boil it in plenty of salted water until half-cooked.
Steep the saffron in a few spoonfuls of hot water.
Line the bottom of the pot with buttered lavash to form a crust.
Layer the rice, drizzling with butter and saffron infusion.
Warm the dried fruit and chestnuts separately in butter.
Steam the rice covered for 35–40 minutes and serve with the fruit on top.
