Ashlyan-Fu
A cold Dungan-Kyrgyz dish with noodles, starch jelly, and spicy sour sauce.
Ingredients
- Wheat noodles300 g
- Cornstarch100 g
- Water700 ml
- Vinegar3 tbsp
- Soy sauce2 tbsp
- Garlic3 cloves
- Chili pepper1 pcs
- Cucumber1 pcs
- Egg1 pcs
- Oil2 tbsp
Instructions
Cook cornstarch and water into a thick jelly, pour into a mold, and chill until set.
Boil the noodles, rinse with cold water, and set aside.
Beat the egg, fry a thin omelet, and cut it into strips.
Mix vinegar, soy sauce, garlic, chili, and a little water for the spicy sour sauce.
Cut the starch jelly into strips and julienne the cucumber.
Arrange noodles, jelly, cucumber, and egg in a bowl and pour over the sauce.
