Soak the dry beans overnight, then boil until tender, or use canned beans.

Finely chop the onion, celery, and bell pepper and sauté until soft.

Add garlic, smoked paprika, bay leaf, and sausage or ham, if included in the recipe.

Add the beans, a little broth or water, and simmer for 20–30 minutes until thick.

Cook the rice separately until fluffy.
