Estonian beet salad with potatoes, herring, and sour cream

Ingredients

  • Beetroot2 pcs
  • Potatoes600 g
  • Herring300 g
  • Pickles3 pcs
  • Sour cream150 g
  • Mayonnaise120 g
  • Salt1 to taste
  • Black pepper1 to taste
  • Mustard1 tsp

Instructions

Boil or roast beets, potatoes, and carrots, then cool and peel them.

Dice herring, apple, pickles, and vegetables finely.

Chop the onion very finely, blanching or pickling it if desired.

Mix the ingredients in a large bowl.

Dress with sour cream and mustard or mayonnaise, then season with salt and pepper.
