Pineapple Fried Rice
A popular thai home-style dish with cooked rice, pineapple, shrimp or chicken, well suited for a family weekly menu.
Ingredients
- Cooked rice500 g
- Pineapple250 g
- Shrimp or chicken350 g
- Eggs2 pcs
- Cashews60 g
- Curry powder1 tsp
- Black pepper1 to taste
- Soy sauce1 tbsp
- Garlic2 cloves
- Lime1 pcs
- Fish sauce1 tbsp
Instructions
Break up cold rice with your hands so the grains are separate.
Dice the pineapple and prepare vegetables and spring onion.
In a hot pan, fry garlic, then add shrimp, chicken, or tofu.
Add rice, pineapple, peas or pepper, and toss quickly.
Season with soy sauce, fish sauce, or curry powder to taste.
Serve with cashews, lime, and herbs.
