Andijviestamppot

Mashed potatoes with endive or leafy greens and bacon.

Ingredients

  • potato700 g
  • kale or leaf cabbage300 g
  • bacon180 g
  • milk300 ml
  • butter40 g
  • salt1 to taste

Instructions

Peel and boil the potatoes in salted water until tender.

Slice endive or chicory into thin strips.

Fry bacon until crisp if included.

Drain the potatoes, add butter and warm milk, and mash.

Stir raw sliced endive into the hot mash so it wilts only slightly.

Serve with bacon, sausage, or gravy.
