Arroz Chaufa

Peruvian Chinese-style fried rice with egg, chicken, and soy sauce.

Ingredients

  • Cold cooked rice500 g
  • Cooked chicken breast250 g
  • Eggs3 pcs
  • Spring onion40 g
  • Soy sauce4 tbsp
  • Ginger1 tsp
  • Garlic cloves2 cloves
  • Oil3 tbsp

Instructions

Break up the cold rice with your hands so there are no clumps.

Beat the eggs and scramble them quickly in a hot skillet, then set aside.

In the same skillet, fry the garlic, ginger, and chopped chicken for 2 minutes.

Add the rice and stir-fry over high heat for 3–4 minutes.

Pour in the soy sauce, then add the eggs and spring onion.

Toss quickly and serve hot.
