Brigadeiro
Soft Brazilian chocolate truffles with a rich cocoa flavor and a glossy sprinkle coating.
Ingredients
- condensed milk395 g
- cocoa powder30 g
- butter15 g
- chocolate sprinkles150 g
Instructions
In a small heavy-bottomed saucepan, combine the condensed milk, cocoa powder, and butter, mixing until smooth.
Place the saucepan over low heat and cook, stirring constantly with a silicone spatula, so the mixture doesn't stick or burn.
Cook for about 10–15 minutes after it starts to simmer gently, until the mixture thickens and starts to pull away cleanly from the bottom and sides of the pan.
Transfer the hot mixture onto a plate or into a shallow dish lightly greased with butter, and let it cool at room temperature for 30 minutes.
Grease your palms with a thin layer of butter, scoop out portions of the mixture with a teaspoon, and roll into balls of about 20 g each.
Roll each ball in chocolate sprinkles, place in paper candy cups, and serve chilled.
