Chicken Enchiladas
Tortillas filled with chicken, sauce, and cheese, then baked until bubbling.
Ingredients
- Chicken breast400 g
- Flour tortillas8 pcs
- Grated cheddar200 g
- Canned tomatoes400 g
- Onion1 pcs
- Garlic2 cloves
- Chili powder2 tsp
- Cumin1 tsp
- Sour cream100 g
Instructions
Boil or bake the chicken breast, then shred it into pieces.
Make the sauce by sauteing onion, then adding tomatoes, chili powder, cumin, and garlic; simmer for 10 minutes.
Fill the tortillas with chicken and half of the cheese, then roll them up.
Place the rolls in a baking dish and cover with sauce.
Sprinkle with the remaining cheese and bake at 180°C for 20-25 minutes.
Garnish with sour cream, cilantro, and sliced avocado.
