Spanish Tortilla with Zucchini
Home-style Spanish tortilla with potatoes, eggs, and zucchini
Ingredients
- Potatoes600 g
- Zucchini1 pcs
- Eggs2 pcs
- Onion1 pcs
- Olive oil2 tbsp
- Salt1 to taste
Instructions
Slice the potatoes, zucchini, and onion thinly.
Heat olive oil in a large pan and slowly cook the potatoes with onion for 10-12 minutes until soft.
Add the zucchini and cook for another 4-5 minutes, then drain excess oil.
Beat the eggs with salt, mix with the warm vegetables, and let stand for 5 minutes.
Pour the mixture into the pan and cook over low heat for 5-7 minutes.
Flip the tortilla with a plate and cook for another 3-4 minutes until set.
