Qurutob
Tajik dish of flatbread with sour qurut, onions, tomatoes, and herbs.
Ingredients
- fatir flatbread or lavash300 g
- kurut or thick yogurt250 g
- warm water150 ml
- onion2 pcs
- tomato3 pcs
- cucumber1 pcs
- fresh herbs30 g
- oil2 tbsp
- salt0.5 tsp
Instructions
Dilute qurut with warm water into a sauce; if using yogurt, salt it lightly.
Break the flatbread into pieces and place in a large dish.
Pour the sour dairy sauce over the bread so it softens slightly.
Slice the onions thinly and either fry them quickly or keep them raw.
Top with tomatoes, cucumber, onions, and herbs.
Drizzle with oil and serve immediately before the bread becomes too soft.
