Trinidad Pelau

Ingredients

  • chicken700 g
  • rice350 g
  • pigeon peas250 g
  • coconut milk300 ml
  • brown sugar2 tbsp
  • carrot1 pcs
  • salt1 to taste
  • black pepper1 to taste
  • thyme2 sprigs
  • garlic2 cloves

Instructions

Season the chicken with green seasoning, garlic, pepper, and salt, and marinate for at least 30 minutes.

Melt sugar in a heavy pot into a dark caramel without burning it.

Add the chicken and stir quickly to coat the pieces in caramel.

Add rice, pigeon peas or beans, coconut milk, water, and thyme.

Cover and cook over low heat for 25-30 minutes until the rice and chicken are done.

Rest for 10 minutes and serve with cucumber or salad.
