Provençal-Style Fish
Tender white fish fillet baked in a rich tomato sauce with olives, garlic and Provençal herbs.
Ingredients
- white fish fillet600 g
- canned tomatoes400 g
- pitted olives80 g
- garlic2 cloves
- olive oil2 tbsp
- herbes de provence1 tbsp
- salt1 to taste
- ground black pepper1 to taste
Instructions
Preheat the oven to 180°C. Pat the white fish fillet dry with a paper towel.
Grease a baking dish with 1 tbsp olive oil and arrange the fillet in a single layer.
Mix the canned tomatoes, minced garlic, 1 tbsp olive oil, Provençal herbs, salt and black pepper.
Spread the tomato mixture evenly over the fish, then scatter the pitted olives on top.
Cover the dish with foil and bake for 15 minutes at 180°C, so the fish steams evenly in the sauce.
Remove the foil and bake for another 8–10 minutes, until the fillet turns opaque and flakes easily with a fork.
Let the dish rest for 5 minutes and serve hot with the tomato-olive sauce.
