Warm Goat Cheese Salad

A French salad with crispy toasts, tender warm goat cheese, walnuts and a honey-mustard dressing.

Ingredients

  • goat cheese150 g
  • mixed salad greens150 g
  • baguette4 slices
  • walnuts50 g
  • olive oil2 tbsp
  • balsamic vinegar1 tbsp
  • honey1 tbsp
  • mustard1 tsp
  • salt1 to taste
  • black pepper1 to taste

Instructions

Preheat the oven to the grill (broil) setting at 220°C. Wash the salad leaves, pat them dry thoroughly and arrange on two plates.

Slice the goat cheese into rounds about 1 cm thick and place a few pieces on slices of baguette.

Put the baguette with cheese under the broiler for 3–5 minutes, until the bread is toasted and the cheese softens and turns lightly golden.

Roughly chop the walnuts and toast them in a dry skillet for 2–3 minutes, stirring constantly, until fragrant.

For the dressing, combine olive oil, balsamic vinegar, honey and mustard. Add salt and black pepper to taste and whisk with a fork until smooth.

Drizzle the dressing over the salad leaves, toss to combine, and scatter the walnuts over the plates.

Top the salad with the hot goat cheese toasts and serve immediately, while the cheese is still warm.
