White bean salad with onion, parsley, and lemon dressing.

Ingredients

  • White beans300 g
  • Red onion1 pcs
  • Parsley20 g
  • Lemon1 pcs
  • Olive oil2 tbsp
  • Eggs2 pcs
  • Salt1 to taste
  • Vinegar1 tbsp

Instructions

Cook white beans until tender or use canned beans, draining well.

Slice the onion into thin half-rings and salt lightly to soften.

Cut tomatoes, parsley, and eggs if included.

Mix beans with onion, herbs, and vegetables.

Dress with olive oil, vinegar or lemon juice, salt, and sumac.

Serve chilled or at room temperature.
