Ingredients

  • Eggplants2 pcs
  • Zucchini1 pcs
  • Bell peppers2 pcs
  • Potatoes600 g
  • Onion1 pcs
  • Canned tomatoes400 g
  • Olive oil2 tbsp
  • Salt1 to taste

Instructions

For Vegetable Ghiveci, cut eggplants, zucchini, bell peppers, onion and canned tomatoes into serving pieces.

Brown eggplants, zucchini, bell peppers and onion lightly.

Add onion and cook for 3-5 minutes.

Pour in olive oil and add the ingredients.

Simmer gently until tender and the sauce is thick.

Adjust salt and pepper and serve hot.
