Chinese Tomato Egg Stir-Fry
Quick Chinese home dish with juicy tomatoes and soft eggs.
Ingredients
- Tomatoes4 pcs
- Eggs4 pcs
- Spring onion20 g
- Sugar1 tsp
- Soy sauce1 tsp
- Oil3 tbsp
- Salt0.5 tsp
Instructions
Cut the tomatoes into large wedges and beat the eggs with a pinch of salt.
In a hot skillet, quickly scramble the eggs into soft curds and transfer to a plate.
Add a little more oil, then the tomatoes, sugar, and soy sauce.
Cook for 3–4 minutes until the tomatoes release juice but do not fully collapse.
Return the eggs to the skillet and fold gently.
Sprinkle with spring onion and serve with rice.
