Portuguese Tomato Rice

Ingredients

  • Rice250 g
  • Canned tomatoes400 g
  • Onion1 pcs
  • Garlic2 cloves
  • Olive oil2 tbsp
  • Vegetable broth650 ml
  • Salt1 to taste
  • Parsley15 g
  • Bay leaves2 pcs
  • Tomato paste2 tbsp

Instructions

Finely chop onion and garlic and saute in olive oil until soft.

Add crushed tomatoes or tomato paste and simmer for 5-7 minutes.

Add the rice and stir it into the tomato base.

Pour in hot water or broth, season with salt, and add bay leaf.

Cook over low heat until the rice is tender, leaving the dish slightly saucy.

Remove from the heat, sprinkle with parsley, and serve with fish or meat.
