Albanian white beans in a thick tomato sauce

Ingredients
- White beans300 g
- Onion1 pcs
- Carrot1 pcs
- Canned tomatoes400 g
- Tomato paste2 tbsp
- Olive oil2 tbsp
- Salt1 to taste
- Black pepper1 to taste
Instructions

Rinse tomato paste, white beans, onion and carrot; soak dry legumes and cook until tender.

Chop onion and carrot and saute until soft.

Add white beans, onion, carrot, canned tomatoes and tomato paste and pour in olive oil.

Simmer gently until thick.

At the end, stir in olive oil, then season with salt and pepper.

Serve hot.
