Eggplant Parmesan

- Eggplants3 pcs
- Tomato sauce500 g
- Mozzarella250 g
- Parmesan100 g
- Flour80 g
- Eggs2 pcs
- Olive oil4 tbsp
Instructions
Prepare the filling by cutting the ingredients and, if needed, sautéing the meat, vegetables, or aromatic base.
Mix the sauce, eggs, cream, tomatoes, cheese, or other binding base according to the recipe.
Grease a baking dish and spread the ingredients in an even layer.
Pour over the sauce or top with cheese, breadcrumbs, or herbs.
Bake in a preheated oven until done, with a golden top and a hot center.
Let the dish rest for 5–10 minutes so it slices better, then serve warm.
