Bissara

Thick Moroccan bissara — a smooth purée of dried fava beans with garlic, cumin and a generous drizzle of olive oil.

Ingredients

  • dried peeled fava beans340 g
  • water1600 ml
  • garlic6 cloves
  • olive oil80 ml
  • ground cumin2 tsp
  • ground sweet paprika2 tsp
  • salt1.5 tsp
  • lemon1 pcs

Instructions

Soak the dried, peeled fava beans in cold water for 8 hours or overnight.

Drain the water, rinse the beans and remove any remaining bits of skin.

Transfer the beans to a pot, add 1600 ml water, 6 cloves of garlic, ground cumin, sweet paprika, 40 ml olive oil and salt.

Bring to a boil, reduce the heat and simmer with the lid slightly ajar for 60–75 minutes, stirring occasionally, until the beans are completely tender.

Strain the beans, reserving the cooking liquid, and blend with an immersion blender until smooth, gradually adding the reserved liquid until it reaches the consistency of a thick soup.

Add the juice of half a lemon, stir, and adjust the salt if needed.

Serve the bissara hot: drizzle each portion with the remaining olive oil and sprinkle with a pinch of ground cumin.
