
Çoban Salatası
A refreshing Turkish salad of finely chopped tomatoes, cucumbers, and green peppers with a light olive oil and lemon dressing.
Ingredients
- tomato3 pcs
- cucumbers2 pcs
- green pepper2 pcs
- onion1 pcs
- parsley20 g
- fresh mint10 g
- olive oil2 tbsp
- lemon juice2 tbsp
- salt1 to taste
Instructions
Wash the tomatoes, cucumbers, green pepper, parsley, and mint. Peel the cucumbers if desired, and remove the stems and seeds from the pepper.
Cut the tomatoes and cucumbers into roughly 1 cm cubes, and finely dice the green pepper to the same size.
Slice the onion into thin half-moons, sprinkle with salt, and rub with your hands until softened, then rinse under cold water and drain well.
Finely chop the parsley and fresh mint. Transfer all the prepared vegetables and herbs into a bowl.
In a separate small bowl, whisk together the olive oil, lemon juice, and salt until well combined.
Pour the dressing over the salad and gently toss with a fork, taking care not to mash the tomatoes.
Serve immediately while the vegetables are still crisp, as a side dish with meat, fish, or rice.
