Azerbaijani yogurt soup with herbs, rice, and chickpeas.

Ingredients

  • matsoni or yogurt700 g
  • water500 ml
  • rice60 g
  • cooked chickpeas120 g
  • egg1 pcs
  • wheat flour1 tbsp
  • cilantro40 g
  • dill40 g
  • spinach100 g
  • salt1 tsp

Instructions

Cook the rice until half-done.

Whisk yogurt, water, egg, and flour until smooth.

Place over low heat and stir continuously until it comes to a boil.

Add the rice and cooked chickpeas and cook for 10 minutes.

Finely chop the herbs and spinach and add them to the soup.

Cook for 5 more minutes, salt at the end, and serve warm or cold.
