Tzatziki

Tzatziki is a refreshing Greek sauce made with yogurt, crisp cucumber, and garlic, flavored with dill and mint — perfect as a dip or a side for grilled vegetables and meat.

Ingredients

  • greek yogurt400 g
  • cucumber1 pcs
  • garlic2 cloves
  • fresh dill15 g
  • olive oil3 tbsp
  • lemon0.5 pcs
  • salt1 to taste
  • black pepper1 to taste
  • fresh mint10 g

Instructions

Wash the cucumber and grate it on a coarse grater; you can leave the peel on.

Sprinkle the cucumber with salt and let it sit for 10–15 minutes to release its juice.

Squeeze out the cucumber by hand or through cheesecloth to remove excess liquid.

Press the garlic through a garlic press or grate it finely.

In a bowl, combine the Greek yogurt, squeezed cucumber, and garlic.

Add the chopped dill and mint, olive oil, and the juice of half a lemon; stir well.

Season with salt and pepper to taste, and mix thoroughly until smooth.

Cover and chill for at least 1 hour to let the flavors develop. Serve cold as a sauce or dip with lavash or pita.
