Fideo Seco

A Mexican home-style dish of toasted thin noodles in a rich tomato-chipotle sauce, topped with fresh garnishes.

Ingredients

  • thin fideo noodles200 g
  • tomato350 g
  • onion0.25 pcs
  • garlic1 clove
  • chipotle pepper in adobo1 pcs
  • vegetable oil125 ml
  • chicken broth720 ml
  • salt1 to taste
  • fresh cheese100 g
  • pork cracklings100 g
  • avocado1 pcs

Instructions

Blend the tomatoes, onion, garlic, and chipotle peppers in adobo sauce until smooth, then strain the sauce.

Heat the oil in a wide pot and toast the fideo noodles, stirring constantly, until evenly golden; drain off any excess oil.

Pour the tomato sauce over the noodles and cook over medium heat for about 3 minutes, until the sauce thickens slightly and loses its raw taste.

Add the hot chicken broth and salt, bring to a boil, cover, and cook over the lowest heat for 10–15 minutes, until the fideo is tender and has absorbed the liquid.

Remove the pot from the heat and let the fideo rest, covered, for 5 minutes to let the noodles set.

Serve topped with crumbled fresh cheese, pork cracklings, and slices of avocado.
