Finnish Salmon Casserole

This delicate Finnish casserole, lohikeitto-style lohikiusaus, brings together potatoes, salmon, cream and dill in a simple homestyle bake with a golden top.

Ingredients

  • salmon (skinless, boneless)500 g
  • potato1000 g
  • onion1 pcs
  • cream300 ml
  • dill30 g
  • salt1 tsp
  • ground black pepper0.5 tsp
  • foil1 pcs

Instructions

Preheat the oven to 200°C. Peel the potatoes and cut into thin strips, and slice the onion into thin half-rings.

Skin and bone the salmon, then cut it into strips about 2 cm thick. Finely chop the dill.

Layer half of the potatoes and onion in a baking dish, season evenly with salt and pepper.

Arrange the salmon on top along with half of the dill, then cover with the remaining potatoes and onion and season again with salt and black pepper.

Pour in the cream so it soaks into the layers without fully covering them. Cover the dish with foil.

Bake on the middle rack of the oven for 45 minutes, then remove the foil and continue baking for another 10–15 minutes, until the potatoes are tender and the top is golden brown.

Let the casserole rest for 10 minutes, sprinkle with the remaining dill, and serve hot.
