Kachumber
A crunchy Indian salad of cucumber, tomato and onion, brightened with chili heat, a tang of lemon and fresh herbs.
Ingredients
- cucumbers2 pcs
- tomato3 pcs
- red onion1 pcs
- fresh cilantro20 g
- fresh mint10 g
- green chili1 pcs
- lemon1 pcs
- chili powder0.5 tsp
- ground cumin0.5 tsp
- black salt (kala namak)0.25 tsp
- salt1 to taste
Instructions
Wash the cucumbers, tomatoes, red onion, cilantro, mint and green chili, then pat dry. Cut the cucumbers into small cubes, cut the tomatoes into cubes of the same size (removing the seeds first if you like), and finely dice the onion.
Finely chop the cilantro, mint and green chili.
Transfer the cucumbers, tomatoes and onion to a large bowl, then add the cilantro, mint and green chili.
Sprinkle the vegetables with chili powder, ground cumin, black salt and regular salt.
Squeeze the lemon juice into the bowl and gently toss the salad so the spices and juice coat the vegetables evenly without crushing them.
Taste and add more regular salt or lemon juice if needed. Serve the kachumber right away, while the vegetables are still crisp.
