Kugelis
A hearty Lithuanian potato bake with a crispy crust, a tender center, and fried bacon and onion.
Ingredients
- potato1500 g
- bacon250 g
- onion1 pcs
- eggs2 pcs
- milk300 ml
- butter20 g
- salt1 to taste
- black pepper (ground)1 to taste
Instructions
Preheat the oven to 180°C. Grease a baking dish (about 2 L capacity) with 20 g of butter.
Dice the bacon finely and fry over medium heat for 5–7 minutes to render the fat. Add the finely chopped onion and cook for another 4–5 minutes until golden.
Peel the potatoes and grate them finely. Work quickly so the mixture doesn't have time to darken.
Heat the milk in a saucepan until just below boiling, but don't let it boil. Pour the hot milk into the grated potatoes and stir.
Beat in the eggs, add the fried bacon and onion, salt, and black pepper. Mix thoroughly until well combined.
Pour the mixture into the greased dish, smooth the top, and place in the oven. Bake for 70–80 minutes, until the top turns golden brown and the center is set.
Let the kugelis rest for 10 minutes after baking, cut into portions, and serve hot.
