A tangy Turkish salad made with soft bulgur, tomato and pepper paste, fresh herbs, and a sweet-and-sour pomegranate dressing.

  • fine bulgur250 g
  • hot water300 ml
  • tomato paste2 tbsp
  • red pepper paste1 tbsp
  • olive oil4 tbsp
  • lemon juice2 tbsp
  • pomegranate sauce2 tbsp
  • green onion4 pcs
  • tomato2 pcs
  • green bell pepper1 pcs
  • parsley30 g
  • mint10 g
  • lettuce leaves1 head
  • salt1 to taste
  • red pepper flakes1 tsp
  • black pepper0.5 tsp

Instructions

Pour the fine bulgur into a wide bowl, add the tomato paste and red pepper paste. Pour in hot water, cover, and let sit for 15 minutes so the bulgur absorbs the water and softens.

Add olive oil, lemon juice, and pomegranate molasses to the swollen bulgur; mix thoroughly, then knead the mixture with a spoon or your hands for 2–3 minutes so the paste evenly colors the grains.

Finely chop the green onions, tomatoes, green bell pepper, parsley, and mint.

Add the chopped vegetables and herbs to the bulgur and mix gently, being careful not to mash the tomatoes into a puree.

Season with salt, red pepper flakes, and black pepper; taste and adjust the acidity with lemon juice or pomegranate molasses as needed.

Cover the kısır and let it rest for 10 minutes at room temperature so the flavors meld together.

Separate the lettuce leaves, arrange them on a plate, top with the kısır, and serve chilled or at room temperature.
