Minestrone
A hearty Italian vegetable soup with beans, potatoes and small pasta, flavored with fresh basil and served with grated Parmesan.
Ingredients
- onion1 pcs
- carrot1 pcs
- celery2 stalk
- garlic2 cloves
- zucchini1 pcs
- canned chopped tomatoes400 g
- vegetable broth800 ml
- potato2 pcs
- canned beans200 g
- small pasta80 g
- salt1 to taste
- black pepper1 to taste
- fresh basil10 g
- olive oil3 tbsp
- grated Parmesan40 g
Instructions
Dice the onion, carrot and celery into small cubes (about 1 cm) and sauté in olive oil over medium heat for 5 minutes until soft.
Add the minced garlic and diced zucchini, cook for 2 minutes, then pour in the crushed canned tomatoes and simmer for another 3 minutes.
Pour in the vegetable stock, add the diced potatoes, bring to a boil and cook over moderate heat for 15 minutes until the potatoes are tender.
Add the canned beans and small pasta, cook for another 8-10 minutes until the pasta is done, stirring occasionally.
Season with salt and black pepper to taste and remove the pot from the heat.
Add the chopped fresh basil, stir and let the soup rest covered for 5 minutes.
Serve hot, sprinkled with grated Parmesan.
