Minestrone

A rustic vegetable soup with beans, pasta, and tomato broth.

Ingredients

  • Onion1 pcs
  • Carrot1 pcs
  • Selera (stebla)2 pcs
  • Zucchini1 pcs
  • Potato2 pcs
  • Canned tomatoes400 g
  • Canned beans200 g
  • Small pasta80 g
  • Beef broth800 ml
  • Olive oil3 tbsp

Instructions

Dice the onion, carrot, and celery into 1 cm pieces and saute them in olive oil for 5 minutes.

Add the garlic, zucchini, and crushed tomatoes, then cook for 3 minutes.

Pour in the broth, add the diced potatoes, and simmer for 15 minutes.

Add the canned beans and small pasta, then cook for another 10 minutes.

Season with salt, pepper, and basil.

Serve with grated Parmesan.
