Mshaat (Palestinian Cauliflower Fritters)

Golden Palestinian fritters made with tender cauliflower, parsley, onion and cumin.

Ingredients

  • cauliflower600 g
  • water1500 ml
  • eggs3 pcs
  • wheat flour30 g
  • fresh parsley20 g
  • sweet onion1 pcs
  • garlic2 cloves
  • ground cumin1 tsp
  • ground allspice0.5 tsp
  • salt1 to taste
  • vegetable oil60 ml

Instructions

Break the cauliflower into florets, cover with water and boil for 20–30 minutes until tender but not falling apart.

Drain the water, let the cauliflower cool for 5–10 minutes, then chop into small pieces.

Beat the eggs with finely chopped onion and parsley, crushed garlic, cumin, allspice and salt. Add the cauliflower and flour and mix well.

Heat oil in a wide skillet over medium heat. Drop the mixture in by heaping tablespoons, flatten slightly and fry in batches.

Fry for 3–4 minutes on each side until golden brown, transfer to a paper towel and serve hot or warm.
