Tuna Poke

Delicate Hawaiian poke with cubes of fresh tuna, sweet onion, scallions and sesame oil.

Ingredients

  • sashimi-grade tuna500 g
  • sweet onion120 g
  • green onion60 g
  • soy sauce60 ml
  • sesame oil10 ml
  • salt1 tsp

Chill a large bowl and prepare the tuna for sashimi: the fish should be very fresh, with no skin or bones.

Pat the tuna dry with a paper towel and cut it into even cubes about 2 cm.

Slice the sweet onion into thin half-rings, and the scallions into thin rings.

In a separate bowl, mix the soy sauce, sesame oil and salt.

Add the tuna, sweet onion and scallions to the dressing. Toss very gently with a spatula so as not to break up the fish cubes.

Cover the bowl and chill the poke for 10–15 minutes; there's no need to marinate longer, so the tuna keeps its delicate texture.

Serve the poke right after chilling as an appetizer or main dish; give it one more gentle toss before serving.
