Tender white fish baked in a rich tomato sauce with onion, garlic, olive oil and herbs — a simple yet flavorful Greek dish.

Ingredients

  • white fish fillet1 kg
  • potato600 g
  • onion3 pcs
  • garlic3 cloves
  • ripe tomato500 g
  • tomato juice250 ml
  • olive oil150 ml
  • fresh parsley3 tbsp
  • raisins50 g
  • dried oregano1 tsp
  • sugar1 tsp
  • bay leaf2 leaf
  • salt1 to taste
  • black pepper (ground)1 to taste

Instructions

Preheat the oven to 180°C. If using frozen fillets, thaw completely and pat dry.

Peel the potatoes and cut into thin wedges, slice the onion into half-rings, and cut the garlic into thin slices.

Heat half the olive oil in a wide skillet. Sauté the potatoes for 2 minutes, then add the onion, garlic and bay leaf, and cook for another 5–7 minutes until the vegetables soften.

Transfer the potatoes and onion to a large baking dish. Arrange the white fish fillets on top.

Combine the crushed tomatoes, tomato juice, sugar, oregano, salt, black pepper and the remaining olive oil. Pour the sauce over the fish and vegetables, sprinkle with parsley and scatter the raisins on top.

Cover the dish with foil and bake for 40 minutes at 180°C.

Remove the foil and bake for another 10 minutes, until the sauce thickens and the top turns lightly golden.

Remove the bay leaf, let the dish rest for 5–10 minutes, and serve hot.
