Swedish Apple Cake
A delicate Swedish apple cake with a light vanilla base, juicy apples, and a fragrant cinnamon crust.
Ingredients

- white sugar250 g
- wheat flour220 g
- baking powder2 tsp
- vanilla sugar1 tsp
- salt1 pinch
- butter100 g
- milk180 ml
- brown sugar60 g
- ground cinnamon1 tsp
Instructions
Preheat the oven to 175°C. Line the bottom of a 25 cm springform pan with parchment paper.
Peel the apples, core them, and cut into medium-thick slices so they hold their shape during baking.
Beat the eggs with the white sugar until light and fluffy. Sift together the flour, baking powder, and vanilla sugar, add a pinch of salt, and mix until you have a smooth batter.
Melt the butter, stir in the milk, then fold the mixture into the batter and mix until smooth and fairly runny.
Pour the batter into the pan, arrange the apple slices in concentric circles on top, pressing them lightly into the batter. Sprinkle the surface with brown sugar and ground cinnamon.
Bake for about 45 minutes at 175°C: the cake should be springy to the touch, and a wooden skewer inserted into the center should come out clean.
Let the cake cool in the pan, then carefully release the ring and serve warm or cold.
